Here’s the brochure for my old 968. Unlike today, where the list of options is longer than the list of standard features and can easily double the price of the car, back in the ‘90s things were delightfully simple by comparison.

sport chassis?
I miss when leather was optional (my wife hates me for saying that.) My cloth sport seats in my e30 are the best seats ever

I’m firmly in the cloth seat camp as well, although I might be OK with leather if the seats are ventilated (but that's just something else to break) . Several of my previous cars, including the 968, had at least partial leather seats and I was indifferent to that fact. When I bought the Mazda5 all I wanted was the manual transmission, and gladly accepted the cloth seats and higher profile wheels and tires that came with the base ‘Sport’ model, the only one with the 6MT option.
You could tell that whoever originally spec’d out my 968 was a true enthusiast - sport chassis, 17" wheels and tires, and LSD. I don’t remember if the seats were full or partial leather, but I know that they weren’t powered or heated. I don’t remember much about the stereo or the headlight washers, either. All I cared about were the performance bits and bobs, and those were all present and accounted for.

I do love heated seats, I’ll give in for that. I’m actually ok with no heat but heated seats (because its texas haha). I have not ever had cloth + heated seats but I bet its amazing...

It does get chilly out here in t he rust belt, and at times I have been tempted to retrofit my car with bun warmers. I may be old fashioned, but I personally suffer in the interest of the longevity of my car. Unless I need the defroster, the climate control, and any high-current draw, stays off, and the revs below 3,000, until the engine is up to operating temperature. With my 2.3 mile commute, that means that I don’t use the heat until I’m almost to work...
